What's Cooking?

NOVEMBER




Jessica made:


Sausage Tortilla Lasagna
1 ½ lb sausage ½ tsp garlic
2 c small curd cottage cheese 3 c spaghetti sauce
2 T all purpose flour 10 lg tortillas
1 tsp oregano 1 ½ c shredded mozzarella cheese
1 tsp basil

Brown sausage in a skillet. Drain grease. Mix cottage cheese and flour in a large bowl. Add the sausage, seasonings and 1 ½ c of the spaghetti sauce. Mix. Spoon ½ c of the mixture on to each tortilla. Roll like a jelly roll. Place seam side down in a large baking pan sprayed with cooking spray. Pour remaining sauce over the top. Bake covered at 375F for 30 to 35 minutes. Uncover, sprinkle with cheese. Put back in oven until the cheese melts. Serves 6.







Kayla made green bean casserole.



Green Bean Casserole
16 oz bag French green beans cooked
can cream of chicken soup
cooked bacon crumbled
salt and pepper
can French fried onions

Combine beans, bacon and soup. Add ½ can onions. Bake at 350F for 30 minutes. Top with the remaining onions and bake 5 minutes more.

Jasmine made chicken.


Zesty BBQ Chicken
21/2-3 lb chicken cut up or chicken pieces 2/3 c brown sugar
2 T vegetable oil ½ c honey
1 tsp seasoned salt 2 ½ c bbq sauce
½ c onion chopped

Preheat oven to 300F. Coat chicken with cooking oil. Season with salt. Mix onion, brown sugar, honey, and bbq sauce together. Pour over chicken. Bake uncovered for 2 hours.

Tyler made Hobos



Hobo Dinner
1 ½ -2 lb lean ground beef ½-1 cup ketchup or tomato sauce
1 egg beaten ½-3/4 cup uncooked oatmeal
2 yellow squash sliced 2 -3 lg. potatoes peeled and thinly sliced
4 carrots sliced 2 lg. onion thinly sliced
Salt and pepper to taste



Mix ground beef, ketchup, egg and oatmeal. Form into six patties. Place each on a square of aluminum foil. Place vegetables on top of each patty. Add salt and pepper. Wrap foil tightly around each patty. Place on baking sheet. Bake at 375F for 1 hr to 1 hr 15 min.









Jessica made lasagna with ground sausage. No picture of her because she had to leave for work.

I love this idea. I Think I'll start letting my girls choose and help prepare dinner more often. They are great at choosing and serving breakfast or snacks.
