January Cooking

Here's what the kids cooked last month.


Jessica made homemade pizza.





Tyler made hot roast beef sandwiches with mashed potatoes and gravy.

Jasmine made taco salad. We use lettuce, tomatoes, shredded cheese, crushed tortilla chips, taco meat and catalina dressing.






Jeff made cheeseburger pie





Cheeseburger Pie
1 lb ground beef
1 ½ c chopped onion (optional)
½ tsp salt
¼ tsp pepper
1 ½ c milk
3 eggs
¾ c baking mix
2 tomatoes sliced
1 c shredded cheddar cheese

Heat oven to 400F. Spray pie pan with cooking spray. Brown ground beef and onion. Stir in salt and pepper. Spread cooked meat and onions in pie pan. Beat eggs, milk and baking mix until smooth. Pour over hamburger. Bake 25 minutes. Top with tomatoes, sprinkle with cheese.Bake 5-10 minutes longer.

































Adam made a Taco Bake

Taco Bake
2 lbs hamburger 2 tomatoes
lg onion chopped 2 tsp chili powder
15 oz can tomato sauce ½ tsp salt
pkg taco seasoning mix (mild) ½ tsp pepper
15 oz can kidney beans 12 hard taco shells
2 c grated cheddar cheese 1/3 to ½ head lettuce shredded

Brown beef, add onions, cook until tender/brown. Add seasonings, tomato sauce and beans. Break shells into 1/4ths and place in bottom of 9x13 pan. Spoon meat over shells. Sprinkle with cheese. Bake at 350 for 20 minutes. Top with lettuce and tomato.

Very yummy. Do you think that the milk in the hamburger pie can be substituted with something non-dairy? Like soy milk?

I'm not sure about substitions. I am lactose intolerant but I don't really like the hamburger pie that well so I only had a little so my son wouldn't feel bad : )
