What's Cooking?

March's Food
Kaleb made diet soda cake. You can use any cake mix, add ONLY 12 ounces of diet soda, any flavor (no eggs, oil , water etc) and cook in a 9x13 pan for the time given. It will be really moist and doesn't need frosted. We normally use yellow cake and diet Sunkist. Kaleb tried yellow cake and diet Mt Dew.


Cassel Crew Sweet BBQ Chicken 

2-3 lb chicken tenders                                     2/3 c brown sugar
2 T vegetable oil                                             ½ c honey
1 tsp seasoned salt                                           1 ½ c bbq sauce

Preheat oven to 350F. Coat chicken with cooking oil. Season with salt. Mix onion, brown sugar, honey, and bbq sauce together. Pour over chicken. Bake uncovered for 45-60 minutes.
Jasmine made ranch shake and bake chicken using boxed shake and bake, mixed vegetables and garlic bread.
Jessica decided to try this, but we really needed a  deep  fryer. We ended up with oil all over the floor, counters, stove etc.



She also made green bean casserole.
Green Bean Casserole 
16 oz bag French green beans cooked
can cream of chicken soup
cooked bacon crumbled
salt and pepper
can French fried onions

Combine beans, bacon and soup. Add ½ can onions. Bake at 350F for 30 minutes. Top with the remaining onions and bake 5 minutes more.
Tyler made rice casserole. It's one of those dishes that is almost indestructible.

Cassel Rice Casserole 
1 can peas (including juice)             1 lb hamburger
1 cup minute rice uncooked               bacon strips
1 small can tomato soup

Mix peas, rice and soup. Let stand while browning the hamburger. Mix together in casserole dish. Top with bacon strips (microwave for 2-3 minutes first if desired). Bake covered at 350F for one hour. Take cover off for last ten minutes.
Kayla made pineapple chicken in the crock pot. It's not a recipe we'll be using again.  It was one of those posted on facebook and it showed pineapple glazed chicken but when you actually make it, it's running and is just chicken tenders soaked in pineapple juice. To make it come out like the picture on facebook you'd have to brown the chicken and add some corn starch or something to thicken the sauce and not just have pineapple juice.
Adam made cream cheese chicken chili. This is our own version of an online recipe.
Adam was called into work early before it was done, so I don't have a picture of him  with it.
Crock Pot Cream Cheese Chicken Chili
4 chicken breasts
2 cans Rotel tomatoes
1 large can corn undrained
1 can black beans drained and rinsed
1 can red kidney beans drained and rinsed
2 envelopes ranch dressing mix
1 tsp chili powder
2 8 oz pkg cream cheese

Place the uncooked chicken in the bottom of the crock pot. Top with the Rotel, corn, beans, dressing mix, cumin and chili powder. Stir to mix. Top with cream cheese. Cook on low for 4-5 hours (or less) stirring occasionally. Shred the chicken before serving. Can serve over rice or baked potato or use as a dip.

When Adam got home from work, he and Jasmine made strawberry muffins using real strawberries.
Strawberry Muffins
1 cup strawberries diced
1 squeeze of lemon juice
1 cup flour
½ cup sugar
1 tsp. baking powder
¼ cup vegetable oil
1/3 cup sour cream
1 tsp. vanilla extract
1 large egg
1 tsp. powdered sugar
1. Preheat oven to 400. Line a 24-cup mini-muffin tin with paper baking cups.
2. Put diced strawberries into a bowl, spritz lemon juice on them and stir gently to combine.
3. In a medium-size bowl, stir together flour, sugar and baking powder.
4. In a small bowl, beat together oil, sour cream, vanilla and egg. Pour mixture over dry ingredients, stirring to combine with a wooden spoon. Fold in strawberries.
5. Divide batter evenly among the paper cups in the mini-muffin tin. Bake for 12 to 14 minutes or until a cake tester comes out clean.
6. Place tin on a wire rack and leave for 5 minutes. Take out the muffins and continue cooling them in the paper cups on the wire rack. When muffins are completely cool, place the powdered sugar in a small sieve. Shake sieve lightly to dust the muffins with sugar.

The kids made them alone so they aren't too hard. We've done them both in mini cups and regular.
