What's Cooking?


Jasmine made a Mexican beef stew. She started the meat in the crock pot before school.






Mexican Beef Stew
2 lbs of stew meat
28 oz can of whole or diced tomatoes undrained
1 cup frozen small whole onions
1 tsp chili powder
1 env. Taco seasoning mix
15 oz can black beans rinsed and drained
11 oz can of fiesta corn drained

Mix beef, tomatoes, onions and chili powder in crock pot. Cover and cook on low 4-6 hours. Stir in taco seasoning, beans and corn. Cook 30 minutes more or until done.










Easy Chicken Fettuccine
8 oz fettuccine uncooked
2 boneless, skinless chicken breasts cubed
1/2c milk
1/4c vegetable oil spread (??)
1/3c Parmesan grated topping
¼ tsp garlic powder
¼ tsp pepper

Cook fettuccine in large saucepan as directed on package. Drain.
Meanwhile, cook chicken in skillet sprayed with cooking spray.
Add milk and spread to hot fettuccine. Toss lightly until spread is melted and fettuccine is evenly coated.
Add chicken, grated topping and seasonings. Mix & serve.
Serves 4






Tyler made meatballs.
4lbs ground beef
3 eggs
3/4 c bread crumbs (or oatmeal)
1/2c Parmesan cheese
1 1/2 tsp salt
1 tsp pepper
1 tbs parsley
1 tsp garlic
1 tsp oregano

Mix, roll into balls, bake on wire rack on cookie sheet at 350F for 30-45 minutes or until done. (The recipe said one hour but ours were done in a half hour)
**These were rather bland so we are going to substitute a package of spaghetti seasoning in place of the listed seasonings next time.


Jessica made shake and bake chicken.

Thanks Karen. I just want to make sure they can all clean a house, cook and do laundry. But of course I don't want to overburden them so they cook once a month, rotate on unloading laundry (I always wash) and have one household job and one supper job to do.
