What's Cooking?

Glad you asked! Here is what the kids made this month.





Salsa Pizza
1 lb ground beef
1 1/4c chunky salsa
1c Bisquick
1/4c hot water
1/4c flavored processed cheese spread
4 med green onions (optional)
1c shredded Colby-Monterey Jack cheese (4 oz)

Heat oven 375F. Grease large cookie sheet or pizza pan.

Brown ground beef. Stir in salsa and remove from heat.

Mix baking mix, cheese spread and hot water until soft dough froms. Turn dough onto surface dusted with baking mix. Roll in mix to coat.. Knead five times or until smooth. Roll dough into a 14" circle on cookie sheet.

Spread beef mixture over the crust to within 2" of the edge. Sprinkle with onions (optional!). Fold edge over beef mixture. Sprinkle with cheese.

Bake 25 to 28 minutes or until crust is golden brown and cheese is melted.

Serves 6







Chicken & Broccoli Alfredo
8 oz pkg. linguine or spaghetti
1c fresh or frozen broccoli flowerets
2 tbs. butter
1-2 lb. boneless chicken breasts cubed
2 cans cream of chicken soup (I think it would be better with alfredo sauce)
1c milk
1/2c grated Parmesan cheese

Cook linguine according to package directions. Add broccoli for the last four minutes of cooking time. Drain. Heat butter in large skillet. Add chicken and cook until browned, stirring often. Add soup, milk, cheese, pepper, and linguine mixture and heat through. Serve with additional Parmesan cheese.

Chicken Bake
2 c bisquick
1/3c mayo
1/3c milk

2 cups cooked chicken cubed (or turkey)
6 slices of bacon cooked and crumbled
1/4c mayo
1 lg tomato chopped
1c shredded Colby-Monterey Jack cheese

Heat oven 450F. Grease cookie sheet.
Mix Bisquick, 1/3c mayo and the milk until soft dough forms. Press dough into 12x8 inch retangle on cookie sheet.

Bake 8 to 10 minutes or until crust is golden brown.

Mix chicken, bacon and 1/4c mayo. Spoon over crust to within ¼" of edges. Sprinkle with tomato and cheese. Bake 5-6 minutes or until mixture is hot and cheese is melted.

Serves 6



Jasmine didn't cook because the recipe she chose called for canned pumpkin and for some reason you can't get that down here right now. We checked three different stores and no pumpkin. So she just skipped this month.





Jessica made me peanut butter fudge one evening to encourage me with my book project. Yum. Nothing like sugar and peanut butter to get a project going! This is when the fudge was still hot. A little of it made it to the fridge to cool : )

I looked for canned pumpkin for Easter- we went to five different stores!!! One lady said it was "seasonal".... it is in can! pretty sure that wasn't the reason.... I think there must have been a drought or something where the pumpkins are grown!
